With Super Bowl parties fast approaching I thought it was a great time to hand off a quick and easy appetizer recipe.
1 pound of loose Mexican style chorizo
2 large jalapeno peppers
4 ounces of grated sharp cheddar cheese
1 bunch of green onions (6 to 8 onions)
20 egg roll wrappers
1 egg white
½ cup of vegetable oil
Brown the chorizo. Let cool. Clean and stem the jalapeno peppers. Remember to remove the seeds and white parts to reduce the heat, if desired. Clean and trim the green onions. Puree the chorizo, peppers, green onions and cheese in a food processor.
Place a tablespoon of the chorizo mixture in each egg roll wrapper. Fold the sides, roll and seal the edge by brushing with egg whites.
Heat the oil to 350 degrees. Fry the stuffed cigarrillos for 1 minute or until golden.
