Spicy Sweet Potato Hash
2 large sweet potatoes
1 small onion (Vidalia or another sweet variety preferably)
1/2 pound of thick cut bacon
1/2 teaspoon of salt
Cut the bacon into 1/2 inch pieces. Dice the onion. Seed and stem the 2 jalapenos, then finely chop them. Peel and shred the sweet potatoes. I fond the large side of a traditional box grater works best. Fry the bacon, adding the onion and jalapenos as the bacon begins to brown
When the bacon is cooked through, add the shredded sweet potato, Fry until the potato begins to soften then crisp.
I serve mine with eggs sunny side up, but to each his own.
