Spicy Scallops with Angel Hair Pasta
This is a great recipe for its simplicity, as well as its elegance. Scallops are one of those dishes that people are afraid to tackle. But once you figure out the secret of cooking them fast in an extremely hot pan, you realize they are incredibly simple.
The impressive look of this dish makes it a great stay at home Valentine’s Day dinner.
6 large scallops
3 cloves of garlic, minced
1 stick of salted butter (1/2 cup)
1 teaspoon of crushed red pepper flakes
1/2 cup of chopped green onions
1/4 teaspoon of salt
4 ounces of dried angel hair pasta
Prepare the angel hair pasta as directed on the container.
Over low-medium heat, melt the butter in a skillet.
Add the chopped green onion, salt, garlic and pepper flakes. Sweat the spices over low heat for 3 to 5 minutes while preparing the scallops.
Heat a medium, nonstick skillet on high heat. Place cleaned, dry scallops in the pan. Sear on each side for 1 ½ minutes.
Drain the pasta, place back in the pan and add 2 tablespoons of the spicy butter sauce. Toss over low heat. Plate the pasta, top with 3 scallops on each plate. Spoon more of the spicy butter sauce over the scallops and pasta. Serve.
