Chocolate Coconut Crisps

 Desserts and sweets are just a part of spring holidays, especially Easter.  These desserts will definitely fit the bill.   Chocolate and coconut in crispy wrappers are a great addition the dessert table at the next family gathering. 



3 ounces of cream cheese

1/4 cup of half and half

1 1/2   cup of semisweet chocolate chips

1 teaspoon of coconut extract

¼ teaspoon of salt

2 cup of shredded sweetened coconut

2 dozen wonton wrappers

½ cup of coconut oil

1 egg white


In a sauce pan, over medium heat, stir the half and half and cream cheese until melted. Stir in the chocolate chips, salt and coconut extract.  Whisk until smooth.  Stir in the coconut until evenly distributed.  Allow to cool.


Lay out the wonton wrappers,  Add about half a tablespoon to the center of each wrapper.  Brush the edges of the wrappers with the egg white, fold in half and crimp sealed. Heat the oil to 350 degrees in a skillet.


In small batches fry the filled wonton wrappers for about 1 minute in each side, or until golden.

Makes two dozen.
