Leave Santa A Tropical Treat-Cashew Butter Cookies with Passion Fruit Icing
If you spent most of your life in the cold and snowy North Pole wouldn't you want a tropical treat? Well so does Santa. This year leave him a little taste of the tropics with these fun and easy cookies.
Ingredients-Icing
2 cups of confectioners' sugar
2 tablespoons of whole milk
1/2 teaspoon of passion fruit extract
2 drops of yellow food coloring
Ingredients- Cookies
1 3/4 cups of all purpose flour
1 teaspoon of baking soda
1/2 teaspoon of salt
1/2 cup of softened butter
1/2 cup of granulated sugar
1/2 cup of brown sugar
1/2 cup of cashew butter
1/4 cup of finely chopped cashew pieces
1 teaspoon of vanilla extract
1 egg
2 tablespoons of whole milk
Preparation- Icing
In a small bowl, add the milk to the confectioners'
sugar. Add the food coloring and passion fruit extract. Whisk until smooth.
Preparation- Cookies
Pre-heat the oven to 350 degrees.
Sift the flour, baking soda and salt together in a small bowl. Set aside.
Using and electric mixer and a larger bowl, combine the granulated sugar and the softened butter. Add in the brown sugar, cashew butter, vanilla extract, egg and milk. Mix until smooth.
Slowly add the flour, salt and baking soda combination into the wet ingredients, using the electric mixer. Continue until smooth.
Fold in the finely chopped cashews.
Place 1 inch balls of dough on a cookie sheet and bake for 8-10 minutes.
Allow to cool and ice.
Yields about 3 dozen.
