Creamy Mango Slaw
In previous posts, I have mentioned our recent trip to Costa Rica. This is another recipe I created for a small lunch gathering of friend. The dish is extremely simple, refreshing and tastes great. Again thanks to Angie and Dian for being the taste testers for a couple of new recipes.
Ingredients
1 small head of red cabbage
1 medium mango
Juice of 1 lime
1/2 tablespoon of grated fresh ginger
1/3 cup of sour cream
1 teaspoon of salt
Preparation
Wash, core and shred the red cabbage into a large mixing bowl. Add the sour cream, ginger, salt and lime juice to the bowl. Toss until the cabbage is lightly coated with the sour cream and lime mixture. Refrigerate for 15 to 30 minutes.
Peel and dice the mango. Toss lightly with the chilled slaw. Plate and serve.
Makes about six servings as a side dish.
